Ingredients
- 3 Very ripe bananas, mashed
- 2 tbsp Unsalted butter, melted
- 2 Eggs, room temperature
- 2 tsp Vanilla bean paste (or vanilla extract)
- 3 tbsp Pure maple syrup
- 2 cups Superfine almond flour
- ½ tsp Ground cinnamon (optional)
- Pinch of Salt
- 1 tsp Baking soda
- 1 tsp Baking powder
- ¼ cup Dark chocolate chips (optional)
- ¼ cup Chopped walnuts (optional)
Instructions
- Step 1Set your oven to 350°F (conventional, no fan). Line a loaf pan with parchment paper or lightly grease it
- Step 2In a large bowl, mash the bananas until mostly smooth. Add the softened butter, eggs, vanilla, and maple syrup, almond flour, cinnamon, salt, baking soda, and baking powder. Mix until combined. Add walnuts if you’re using
- Step 3Pour the batter into your prepared loaf pan. Sprinkle chocolate chips on top if desired. Bake for 42 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs
- Step 4Let the banana bread cool in the pan for 20 minutes, then transfer to a cooling rack. Allow it to cool completely before slicing for the best texture!
