Tallow Fries
The crispiest fries aren't fried in seed oil. Not to be dramatic, but these air fryer tallow fries are the crispiest I've ever made. No seed oils, just beef tallow.

Ingredients
- 3 Medium russet potatoes, cut into fries
- 2 tbsp Beef tallow
- 2 tbsp Cornstarch
- Salt, to taste
- Black pepper, to taste
Optional
- Grated parmesan, for finishing
Instructions
- Step 1Cut potatoes into fries of similar size and shape, then soak in ice cold water for 10 minutes
- Step 2Drain and dry VERY well with a towel
- Step 3Toss fries with beef tallow, cornstarch, salt, and pepper until fully coated. You can melt the tallow first if you want, but I didn't. I just massaged everything together with my hands
- Step 4Don't overcrowd the basket. Air fry at 400°F for 18 to 20 minutes, shaking halfway through, until crispy and golden
- Step 5Finish with flaky salt and freshly grated Parmesan right after cooking
