Ingredients: 2 NY strip steaks, 1 to 1 ½ inch thick (room temp); 1 ½ lb Baby fingerling potatoes, halved lengthwise; 1 bunch Asparagus, tough ends trimmed; 4 tbsp Butter; 2 tbsp Olive oil; 2 tbsp Neutral oil; 4 Garlic cloves, smashed; A few sprigs Thyme; ½ cup Grated parmesan, plus more to serve; 1 tsp Garlic powder; Salt; Black pepper; Lemon

Give me this plate and all my problems are solved. Is there anything better than a perfectly cooked steak, crispy parmesan potatoes, and crunchy asparagus? I think not. This is my ultimate comfort meal, and I'm sharing it in case you need inspo to do the happy dance this weekend. The whole thing takes about 30 minutes and it all lands at once. Steakhouse dinner at home, no reservation needed

Garlic Butter Steak

Ingredients

2 NY strip steaks, 1 to 1 ½ inch thick (room temp)
1 ½ lb Baby fingerling potatoes, halved lengthwise
1 bunch Asparagus, tough ends trimmed
4 tbsp Butter
2 tbsp Olive oil
2 tbsp Neutral oil
4 Garlic cloves, smashed
A few sprigs Thyme
½ cup Grated parmesan, plus more to serve
1 tsp Garlic powder
Salt
Black pepper
Lemon

Instructions

Step 1Potatoes first. Toss the fingerlings with olive oil, garlic powder, salt, and pepper. Spread the parmesan over parchment paper and lay the potatoes cut side down on top. Air fry at 400°F for 18 minutes until golden and crispy
Step 2While those cook, pat the steaks very dry and season generously with salt and pepper on all sides
Step 3Heat a stainless steel, cast iron, or other heavy pan over high heat until just smoking. Add the neutral oil and sear 3 to 4 minutes per side. For medium rare, pull at 125°F. The temp climbs about 5 degrees as it rests, landing you right at 130°F
Step 4Drop the heat to medium. Add the butter, garlic, and thyme, then tilt the pan and spoon that foaming butter over the steaks for 2 minutes
Step 5Move the steaks to a board to rest 5 to 10 minutes. Don't skip this
Step 6Toss the asparagus into the same pan with a pinch of salt and cook 3 to 4 minutes until charred and tender. Finish with a squeeze of lemon
Step 7Slice the steak against the grain at an angle, fan it out, and drizzle over the pan sauce
