Whipped Ricotta Appetizer

Forget the cheeseboard this dip is the moment. No cooking, no stress, just a creamy, dreamy spread that tastes like a restaurant appetizer but way cheaper.
Perfect for brunch, girls’ night, or a cozy night in. Bonus? Ricotta’s high in protein and calcium.

 

Serves: 4

Time: 10 to 15 minutes

  • INGREDIENTS

    1 tub (2 cups) Ricotta cheese (whole milk recommended)
    1 tbsp Extra virgin olive oil
    ½ tsp Sea salt
    1 Baguette 
    2 tbsp Honey 
    2–3 tbsp Black olives, sliced 
    2 tsp Fresh thyme leaves 
    ½ Lemon's worth of zest
    Microgreens (optional)

  • INSTRUCTIONS

    1. Add ricotta, olive oil, and salt to a food processor or blender. Blend for 1–2 minutes until smooth, light, and fluffy
    2. Slice your baguette. If it’s stale, run it under warm water for 1 second (yes, really!) and pop it in the oven at 300°F for 4-6 minutes
    3. Spoon the whipped ricotta onto one side of a serving plate
    4. Right next to the ricotta, pile on sliced black olives, lemon zest, thyme, and microgreens
    5. Drizzle honey over the ricotta
