Watermelon Halloumi Salad

I’m dead serious… this might be the salad of the summer. Sweet, salty, crispy, juicy and every bite just hits. It’s simple, bold, and honestly kinda genius. Save this and maybe don’t share it with anyone

  • INGREDIENTS

    Salad:

    2 packs halloumi (about 16 oz), cubed and seared

    10–12 watermelon cubes

    2 English cucumbers, cubed

     

    Za'atar Dressing:

    3 tbsp Olive oil

    1 tbsp Lemon juice

    1 tsp Honey

    ½ tsp Dijon mustard

    A splash of White balsamic

    Pinch of Salt

    2 tsp Za’atar

    Fresh chopped mint (to taste)

  • INSTRUCTIONS

    1. Sear halloumi in a hot pan (no oil needed) for 1–2 min per side until golden. Don’t overcook, just enough to get it crispy and soft inside
    2. Arrange watermelon, cucumber, and halloumi into a grid (5 across, 7 down for that satisfying layout) or toss it all together if you’re going casual
    3. Drizzle with dressing, add extra mint and za’atar, and serve right away
