Watermelon Cucumber Rolls

The prettiest and most addictive summer snack you didn’t know you needed. Cool, crunchy, sweet, and salty… basically a bite of vacation. Each roll packs all the flavors in one, inspired by my Middle Eastern summers back home.

 

Serves: 4 to 6

Time: 25 minutes

  • INGREDIENTS

    ½ Small watermelon, peeled

    2 English cucumbers

    8 oz Feta cheese

    3 oz Whipped cream cheese

    A handful of Chopped walnuts

    A handful of Chopped fresh mint

  • INSTRUCTIONS

    1. Slice the watermelon into thin, wide strips using a vegetable peeler. (First peel the rind, then cut a long block about the same width as your peeler.)
    2. Peel cucumbers into strips until you reach the soft, seedy middle, then flip and peel the other side
    3. In a blender or food processor, blend the feta and whipped cream cheese until smooth and creamy
    4. Lay out your strips, add a dollop of the feta mixture to one end, sprinkle with chopped walnuts and mint, then roll it up. Repeat until all the filling is used
    5. Serve cold and enjoy immediately for that ultimate crunch!
