Watermelon Chia Agua Fresca

The drink I am making all summer long. It is naturally sweet, loaded with fresh watermelon and lime, high in fiber thanks to chia seeds, and ready in 10 minutes

 

Serves: 8 to 10 cups

Prep time: 10 minutes

Total time: 20 minutes

  • INGREDIENTS

    1 Whole cold seedless watermelon, cubed

    2 cups Cold water

    4 Limes with of juice

    2 tbsp Maple syrup or honey (optional)

     3 pinches Celtic salt (or your favorite salt)

    3 tbsp Chia seed

    Fresh mint and Lime slices, for garnish

    Ice, for serving

  • INSTRUCTIONS

    1. Blend the watermelon, water, lime juice, maple syrup (if using), and salt in batches until smooth
    2. Taste and adjust if needed
    3.  Strain through a fine mesh sieve
    4. Stir in the chia seeds, don’t blend them. Let the drink sit for 10–15 minutes, stirring once halfway through, until the chia seeds soften slightly
    5. Serve over ice with fresh mint, lime slices, and a watermelon wedge
