Tropical Cloud Overnight Oats

Not to be dramatic but this breakfast isn’t just pretty. It is creamy fruity naturally sweet and actually keeps you full thanks to protein and fiber

 

Serves: 2

Prep time: 10 minutes

Soak time: 4 hours or overnight

Total time: 4 hours 10 minutes (or overnight)

  • INGREDIENTS

    Overnight Oats:

    1 cup Rolled oats
    2 tbsp Chia seeds
    1 ¼ cup Milk of choice (I used almond)
    1 tbsp Maple syrup
    Pinch of salt
    ½ tsp Vanilla

     

    (Optional) Blue Yogurt:

    ¾ cup Greek yogurt

    1 tbsp Honey

    4 tbsp Butterfly pea flowers

    ⅓ cup Hot water

     

    Toppings:

    1 cup Greek yogurt
    1 Ripe champagne mango, diced
    2 Kiwis, thinly sliced 
    Coconut flakes

  • INSTRUCTIONS

    Overnight Oats:

    1. Mix oats, chia, milk, maple syrup, salt, and vanilla then refrigerate overnight or at least 4 hours

     

    (Optional) Blue Yogurt:

    2. Steep butterfly pea flowers in hot water for 15 minutes then strain and cool. Mix with yogurt and honey and stir until soft blue

     

    Assemble:

    3. Line your glass with kiwi slices

    4. Add oat layer then yogurt then a thin mango layer then more yogurt. Top with mango, kiwi, and coconut flakes
