Tallow Fries

The crispiest fries aren't fried in seed oil. Not to be dramatic, but these air fryer tallow fries are the crispiest I've ever made. No seed oils, just beef tallow.

 

Serves: 3 

Prep time: 15 minutes

Cook time: 18 to 20 minutes

Total time: 33 to 35 minutes

  • INGREDIENTS

    3 Medium russet potatoes, cut into fries

    2 tbsp Beef tallow

    2 tbsp Cornstarch

    Salt, to taste

    Black pepper, to taste

     

    Optional:

    Grated parmesan, for finishing

  • INSTRUCTIONS

    1. Cut potatoes into fries of similar size and shape, then soak in ice cold water for 10 minutes
    2. Drain and dry VERY well with a towel
    3. Toss fries with beef tallow, cornstarch, salt, and pepper until fully coated. You can melt the tallow first if you want, but I didn't. I just massaged everything together with my hands
    4. Don't overcrowd the basket. Air fry at 400°F for 18 to 20 minutes, shaking halfway through, until crispy and golden
    5. Finish with flaky salt and freshly grated Parmesan right after cooking
