Stuffed Protein Sweet Potatoes

My forever comfort meal. One of my go-to weekly meal preps. I make these almost every week because they’re so easy, filling, and wildly delicious. High-protein, cozy, and totally customizable with your favorite toppings. Hope they make it into your weekly rotation

 

Serves: 3 to 4

Prep Time: 10 minutes

Cook Time: 45 minutes

Total Time: 55 minutes

  • INGREDIENTS

    3 Sweet potatoes 

    Olive oil

    Salt and pepper

    A pinch of cinnamon

    1 lb 85% Ground beef

    ½ Yellow onion, diced

    ½ Bell pepper, diced

    Taco seasoning

    Paprika

    Avocado

    Tomato

    Cilantro

    Lime

    Sour cream

  • INSTRUCTIONS

    1. Slice sweet potatoes in half and place them cut-side down on a parchment-lined sheet pan. Drizzle with olive oil and season with salt, pepper, and a tiny pinch of cinnamon. Bake at 400°F for 45 minutes, until the insides are soft and caramelized
    2. Sauté the onion and bell pepper in a little oil. Add the ground beef, break it up, and season with salt, pepper, paprika, and taco seasoning. Cook until browned and a little crispy on the edges. Top with chopped cilantro
    3. Fluff the centers of the sweet potatoes (add cheese here if you want them extra cozy), pile on the beef, and load them up with avocado, tomato, cilantro, lime, and sour cream
