Stone Fruit Feta Salad

My go to when I want something easy but still feels like I tried. Ready in under 15 minutes, looks fancy, and tastes like summer in every bite. Sweet, salty, creamy, and crunchy aka everything you want in a summer app.

 

Serves: 2 to 3 

Prep Time: 10 minutes

Cook Time: 4 minutes 

Total Time: 15 minutes

  • INGREDIENTS

    3 peaches, sliced 

    (Tip: Slice your peaches across the middle, opposite of the stem line. The pit comes out so much easier this way.)

    2 nectarine, sliced
    1 cup cherries, pitted and halved 
    1 block feta, cut into triangles 
    ¼ cup chopped walnuts
    Lemon zest 
    Pinch of flaky salt
    Olive oil (I used lemon-infused)
    Aged balsamic vinegar
    Fresh basil 
    Toasted sourdough to serve 

  • INSTRUCTIONS

    1. Grill peaches and nectarines in a cast iron or grill pan with 1 tsp oil, about 2 minutes per side.
    2. Arrange grilled fruit on a plate, alternating skin side up for color.
    3. Tuck in cherries and feta between the slices.
    4. Top with walnuts, lemon zest, olive oil, balsamic, a pinch of salt, and fresh basil.
    5. Serve with toasted sourdough and enjoy!
