Squash Feta Linguine

The coziest fall pasta you’ll ever make! Creamy, tangy, and full of roasted veggie goodness—this dish is a total weeknight winner.

 

Serves: 2–3
Time: 45 minutes

  • INGREDIENTS

     15 oz butternut squash (cubed)

     1 block feta

     1 red bell pepper

     2 garlic cloves 

     Fresh thyme 

     Salt

    Pepper 

     A pinch of red chili flakes 

     Olive oil

     8 oz fresh egg linguine (or your favorite pasta) 

     1 cup reserved pasta water

  • INSTRUCTIONS

    1. Preheat oven to 400°F.
    2. Add squash, feta, bell pepper, garlic, thyme, chili flakes, salt, pepper, and olive oil to a baking dish. Roast for 35–40 mins.
    3.  Cook the pasta in salted water. Reserve 1 cup pasta water before draining.
    4.  Blend roasted veggies and feta (saving some squash for topping) with pasta water until smooth and creamy.
    5.  Toss sauce with cooked pasta, top with extra squash and thyme, and enjoy!
