Spicy Vodka Rigatoni

Creamy, spicy, and velvety—this pasta was inspired by one I had in Miami, and honestly? I think it’s even better. The perfect dish for date night, Valentine’s Day, or when you just need comfort in a bowl.

 

Serves: 2–3
Time: 35 minutes

  • INGREDIENTS

     16 oz rigatoni 

     2 shallots 

     3 garlic cloves 

     1 tbsp Calabrian chili paste 

     1⁄2 tsp honey 

     6 oz tomato paste 

     1⁄2 cup vodka 

     3⁄4 cup cream 

     1 tbsp butter 

     Parmesan + fresh basil 

  • INSTRUCTIONS

    1.  Cook rigatoni 1–2 mins less than package suggests. Reserve 1 cup pasta water.
    2.  Sauté shallots in olive oil over medium heat for 2 mins. Add garlic, chili paste, and honey. Stir 1 min.
    3.  Add tomato paste, toast for 2 mins. Pour in vodka and simmer for 5 mins.
    4.  Lower heat, stir in cream and 1⁄4 cup pasta water. Season with salt and pepper.
    5.  Toss pasta in sauce. Off heat, stir in butter and parmesan. Add more pasta water if needed.
    6.  Serve with extra parm and fresh basil.
