Spicy Scallion Noodles

This is my go-to lazy day meal—easy, comforting, and ridiculously good. Ready in under 15 minutes.

Time: 15 minutes

  • INGREDIENTS

    1 scallion, thinly sliced (save some for garnish)

     2 garlic cloves, minced 

     1 tsp toasted sesame seeds

     1 tbsp chili flakes 

     1⁄4 cup hot avocado oil

     1 tbsp light soy sauce

     1 tbsp dark soy sauce (or sub with more soy sauce + 1⁄2 tsp honey)

     1⁄2 tsp Chinese black vinegar (or any vinegar)

     Pinch of white pepper

     8 oz noodles of choice 

     Chopped cilantro 

     Fried egg  (optional but recommended)

  • INSTRUCTIONS

    1. In a heatproof bowl, add scallions, chili flakes, and sesame seeds.
    2. Pour in hot oil (let it cool for 20 secs first), then stir in garlic, soy sauces, vinegar, and white pepper.
    3. Cook noodles, drain, and toss with scallion oil and cilantro. Adjust seasoning.
    4. Top with a fried egg and garnish with scallions and sesame seeds. Done!
