Rice Paper Mochi

If you’re looking for a healthy snack that actually keeps you full, tastes amazing, AND satisfies your sweet tooth… this is it. These “high protein fake mochi” are creamy, fruity, chewy, and so fun to make

 

Serves: 2 to 3 (makes 7 mochi) 

Prep time: 10 to 15 minutes

Freeze time: 1 hour

Total time: 1 hour 15 minutes

  • INGREDIENTS

    7 Rice paper sheets
    Cornstarch (for dusting)
    16 oz Greek yogurt
    2 tbsp Honey (for the yogurt), and more for the bananas
    Fruit of choice: strawberries, blueberries, apricots, bananas
    Blackberry jam
    Cinnamon

  • INSTRUCTIONS

    1. Mix 2 tbsp honey into your Greek yogurt to sweeten it
    2. Dip each rice paper sheet into warm water for a few seconds on both sides, then dust with cornstarch so it doesn’t stick
    3. In a pan over medium-low heat, drizzle honey and cinnamon add thick sliced bananas, cook for 1 to 2 minutes per side until caramelized
    4. Place the rice paper over a small bowl and fill with yogurt, your choice of fruit, jam, or caramelized bananas. Bring the corners together, twist closed, and trim off the excess
    5. Chill in the freezer for 1 hour then enjoy!
