Pink Pasta

Every Valentine’s Day I make this dreamy pink pasta, and it’s always a hit. The secret? Roasted beets. Creamy, vibrant, and packed with flavor.

 

Serves: 2–3
Time: 40 minutes

  • INGREDIENTS

     1 lb raw beets 

     1 block Boursin (basil & chive)

     1 shallot 

     1 lemon (zest + juice of 1⁄2) 

     Salt & pepper 

     Olive oil 

     Pasta of choice

     1 cup reserved pasta water

     Chives for garnish

  • INSTRUCTIONS

    1. Preheat oven to 400°F.
    2. Peel beets and add to a baking dish with shallot, Boursin, lemon
    3. zest, salt, pepper, and a drizzle of olive oil.
    4. Cover and roast for 25 mins, then uncover and roast for 10 more.
    5.  Meanwhile, boil water, salt it, and cook your pasta. Reserve 1 cup pasta water.
    6.  Blend roasted ingredients with pasta water and lemon juice until smooth. Adjust salt to taste.
    7.  Toss with pasta, garnish with chives, and serve.
