Pineapple Crème Brûlée

Creamy custard tucked inside a pineapple, finished with a caramelized sugar topping. The easiest fancy dessert you’ll ever make it’s tropical, refreshing, and total vacation vibes in every bite

Cook Time: 6 minutes (custard and brûlée torching)

Chill Time: 8 hours

Total Time: 8 hours 21 minutes

  • INGREDIENTS

    1 Pineapple

    2 Egg yolks

    50 g Arrowroot starch

    320 g Sweetened condensed coconut milk

    1 tsp Vanilla bean paste

    Brown sugar (or regular sugar) for the brûlée topping

  • INSTRUCTIONS

    1. Cut a pineapple in half and hollow it out. Blend the flesh and juices with yolks, starch, condensed coconut milk, and vanilla bean paste until smooth
    2. Strain into a pot and cook over medium heat, stirring continuously, until thick and creamy (about 5–6 minutes)
    3. Pour back into the pineapple halves and chill overnight in the fridge
    4. For the fancy finish: sprinkle sugar on top and torch until caramelized (still delicious without!)
