Peach & Ricotta Bruschetta

Juicy peaches, roasted red peppers, creamy ricotta, thyme, balsamic glaze on crispy toast. Sweet, salty, fresh. Done in 10 minutes. Perfect for BBQs, porch hangs, or when you need something that looks fancy with zero effort

 

Serves: 10 to 12 bruschetta (6 to 8 people)

Cook time: 5 minutes

Total time: 15 minutes

  • INGREDIENTS

    1 Baguette, sliced

    2 Ripe peaches, diced

    1 cup Fire roasted red peppers, diced

    1 tbsp Olive oil

    1 tbsp Balsamic vinegar

    1 cup Whole milk ricotta

    Fresh thyme

    Balsamic glaze

    Red pepper flakes

    Flaky salt

    Pepper

  • INSTRUCTIONS

    1. Toss peaches, peppers, oil, vinegar, thyme, salt, pepper, chili. Rest 10 minutes
    2. Toast bread 5 to 7 minutes at 400°F
    3. Assemble with ricotta, peach mix, glaze, thyme, flaky salt. Eat immediately
