Peach Chimichurri Steak

Steak night just got a summer upgrade. Juicy flap steak, crispy potato wedges, charred peaches, and the easiest 5-minute peach chimichurri. Sweet, savory, fresh, and honestly so good together

 

Serves: 4

Prep time: 15 minutes

Cook time: 20 minutes

Total time: 50 minutes

  • INGREDIENTS

    Steak:

    1 lb Angus flap steak

    1 tbsp Olive oil

    1 tsp Salt

    1 tsp Garlic powder

    1 tsp Smoked paprika

    ½ tsp Black pepper

    1 tsp Worcestershire

     

    Peach Chimichurri:

    1 Ripe peach, diced

    ½ cup Parsley, chopped

    1 Small shallot, diced

    1 Garlic clove, grated

    ¼ cup Olive oil

    2 tbsp Red wine vinegar

    1 squeeze of Lemon

    1 pinch of Chili flakes

    Salt to taste

     

    Sides:

    Potato wedges

    1 Peach, halved

  • INSTRUCTIONS

    Steak:

    1. Season steak with oil, salt, garlic powder, paprika, pepper and Worcestershire. Let sit 30 minutes

    2. Cook steak on a very hot pan or grill for 3 to 4 minutes per side. Rest 5 minutes, then slice against the grain

     

    Peach Chimichurri:

    3. Mix all Peach Chimichurri ingredients in a bowl

     

    Sides:

    4. Grill peach halves for about 2 minutes per side until lightly charred

     

    Assemble:

    5. Serve with crispy wedges, grilled peaches, and plenty of peach chimichurr
