Peach Cast Iron Pizza

Not to be dramatic… but this screams summer. Crispy golden edges, creamy burrata, sweet peaches, salty prosciutto, fresh basil, and a balsamic drizzle. It tastes like it came from a fancy restaurant, but it’s straight from your kitchen. Perfect for date night, or a solo night in

 

REQUIRES CAST IRON PAN

Serves: 2

Prep Time: 1 hour 10 minutes (includes dough resting)

Cook Time: 15 minutes

Total Time: 1 hour 25 minutes

  • INGREDIENTS

    1 ball Pizza dough, room tempature

    1 cup Shredded mozzarella

    2 tbsp Olive oil

    1-2 tsp Garlic olive oil, (or any infused oil)

    1 Ripe peach, thinly sliced

    5 Prosciutto slices

    1 ball Burrata

    Fresh basil

    Balsamic glaze

  • INSTRUCTIONS

    1. Let the dough rest on a lightly floured surface for 30 minutes
    2. Add 1 ½ tbsp olive oil to your cast iron, coating the bottom. Place the dough in the skillet, drizzle with another tbsp olive oil, cover, and let it rest for another 30 minutes
    3. With oiled hands, gently stretch the dough so it reaches the edges of the pan
    4. Drizzle with garlic olive oil (or your favorite flavored oil)
    5. Sprinkle on mozzarella, then tear and layer prosciutto. (Veggie swap: use pesto as your base)
    6. Bake at 475°F (no fan) on the middle rack for 14-16 minutes, or until the crust is golden and crispy
    7. Top with torn burrata, fresh basil, and a drizzle of balsamic glaze.
