Peach Balsamic Chicken Skillet

Wait peaches and chicken!? Yes and it is magic. This is my go to 30 minute summer dinner. Juicy golden chicken meets caramelized peaches in a sweet savory balsamic pan sauce with garlic shallots fresh thyme and a touch of honey. One pan only. Perfect for busy weeknights but fancy enough for guests

Prep time: 10 minutes

Cook time: 20 minutes

Total time: 30 minutes

  • INGREDIENTS

    Chicken:

    4 Boneless, skinless chicken breasts or thighs (slice thick breasts in half)

    1 tsp Garlic powder

    1 tsp Onion powder

    1 tsp Smoked paprika

    1 tsp Italian seasoning

    Salt

    Pepper

    2 tbsp Olive oil

     

    Skillet:

    2 Ripe peaches, sliced

    1 Shallot, sliced

    2 Garlic cloves, grated

    ½ cup Low-sodium chicken broth

    2 tbsp Balsamic vinegar

    1 tbsp Honey

    ½ Lemon's worth of juice

    2 tbsp Unsalted butter

    Fresh thyme

    Basil

    Red pepper flakes (optional)

     

    Salad:

    4 cups Arugula

    1 handful of Microgreens

    ⅓ cup Grated parmesan

    ¼ cup Pistachios

    1 tbsp White balsamic

    1½ tbsp Olive oil

    Salt

  • INSTRUCTIONS

    Chicken and Skillet:

    1. Season the chicken and sear in olive oil for about 5 minutes per side until golden and cooked through. Remove from the skillet

    2. Cook the shallot, add the garlic, then caramelize the peaches for 2 to 3 minutes

    3. Stir in the broth, balsamic, honey, and lemon juice. Simmer for 2 to 3 minutes, then add in the butter and thyme

    4. Return the chicken to the skillet and spoon the sauce over the top. Finish with fresh basil and red pepper flakes

     

    Salad:

    5.Toss the salad ingredients together and serve alongside the chicken with warm crusty bread
