One Pot Roast Stew

The coziest one-pot meal that comes together in just about an hour. Perfect for when you’re feeling under the weather or craving something hearty and warm. Just toss everything in one pot, sauté, let it simmer, and you’ve got a rich, tender stew begging for some crusty bread to soak up all that goodness

 

Serves: 4 to 5

Prep Time: 15 minutes

Cook Time: 1 hour

Total Time: 75 minutes

  • INGREDIENTS

    1½ lbs Cubed chuck roast (or stew meat works too)

    2 tbsp Oil

    Salt

    Pepper

    1 Onion, peeled and roughly chopped

    3 Garlic cloves, peeled and left whole

    2 tbsp Tomato paste

    2 tbsp Flour

    4 cups Beef broth

    ½ cup Red wine

    ½ cup Water 

    5 Carrots, peeled & chopped

    3 stalks Celery, chopped

    5 Yellow potatoes, quartered

    1 tsp Dried thyme

    1 Bay leaf

    1 tbsp Apple cider vinegar

    Parsley (for garnish)

    Toasted baguette (for serving)

  • INSTRUCTIONS

    1. Cut the meat into cubes and brown in oil. Season with salt, then set aside
    2. In the same pot, sauté the onion and garlic for a few minutes, then stir in the tomato paste. Deglaze with wine and let it reduce by half
    3.  Add the beef back in with flour, beef broth, and water. Bring to a boil, then cover and simmer for 30 minutes
    4. Add the carrots, celery, potatoes, thyme, and bay leaf. Season again with salt and pepper. Simmer for another 20 minutes, until everything is tender
    5. Stir in apple cider vinegar, top with parsley, and serve hot with toasted baguette.
