Serves: 4

Prep Time: 15 minutes (Optional: 15 to 30 minutes for marinating)

Cook Time: 25 minutes

Total Time: 40 minutes

  • INGREDIENTS

    2 Chicken breasts

    ½ tsp Paprika

    ½ tsp Garlic powder

    1 tsp Onion powder

    Salt & Pepper

    ½ cup Flour

1 oz White wine (non-alcoholic works aswell)

    3 Galic cloves, minced

    3 ½ cups Chicken broth

8 oz Pasta (spaghetti or fettuccine)

1 Lemon's worth of juice and zest (for sauce)

    2 tbsp Butter

    ½ cup Parmesan

Parsely and extra Parmesan for topping

    Optional Marinade:

    ½ Lemon's worth of juice

    1 tbsp Soy sauce

    1 tbsp Olive oil

  • INSTRUCTIONS

    1. Tenderize the chicken by poking it with a fork, helps it soak up flavor. Season with spices. Optional: Marinade in Lemon soy mixure for 15-30 minutes
    2. Pat dry, coat in flour for a golden crust. Let it rest a few minutes so the flour sticks better.
    3. Sear chicken in a hot pan with oil, 5–6 mins per side until golden and cooked through. Set aside.
    4. In the same pan, add wine and cook for 1–2 mins until it evaporates. Add garlic and sauté 30 seconds. Pour in broth, bring to a boil, then add pasta.
    5. Cook 10–12 mins, stirring now and then so it doesn’t stick.
    6. Once pasta is tender and about 1⁄4 cup of liquid is left, lower heat. Stir in butter, lemon zest, lemon juice, and Parmesan until creamy and glossy.
    7. Taste and adjust salt if needed.
    8. Slice the chicken, add it back on top, and finish with parsley and more Parmesan. Enjoy!
