One Pan Kebab Wrap

When I tell you this wrap hits… I mean it. Juicy spiced beef, creamy tangy yogurt sauce, fresh crunchy toppings and all wrapped & toasted to golden perfection Perfect for lunch or dinner, and yes, you can meal prep the kebabs ahead!

Prep Time: 20 minutes

Cook Time: 20 minutes

Total Time: 40 minutes

  • INGREDIENTS

    Beef Kebab:

    2 lb Ground beef (85% lean)

    ½ Onion, grated (discard liquid after grating)

    1 tbsp Tomato paste

    2 tbsp Hot water

     1 tsp Grated saffron 

    ½ tsp Turmeric

    ½ tsp Garlic powder

    ½ tsp Paprika

    1 tbsp Avocado oil

    Salt

    Pepper

     

    Creamy Yogurt Sauce:

    1 cup Greek yogurt

    2 tbsp Mayo

    2 tsp Sumac (optional)

    Parsley, chopped

    ¼ Lemon worth of juice

    Salt 

    Pepper

     

    Sumac Onions:

    1 Red onion, sliced

    1 tsp Sumac (optional)

    Parsley, chopped

    ¼ Lemon worth of juice

     

    Assembly:

    Tortillas

    Sliced tomato

    Pickles

  • INSTRUCTIONS

    Beef Kebab:

    1. Mix Beef Kebab ingredients well
    2. Spread in pan
    3. Slice into 6 strips
    4. Cook 10 minutes on medium-high
    5. Flip and cook for 8 more minutes

     

    Creamy Yogurt Sauce:

    1. Mix Creamy Yogurt Sauce ingredients until creamy and smooth

     

    Sumac Onions:

    1. Massage onions with Sumac Onion ingredients until soften

     

    Assemble:

    1. Warm tortilla (makes folding easier, no cracks)
    2. Spread Creamy Yogurt Sauce, add Beef Kebab, Sumac Onions, sliced tomato, pickles
    3. Wrap tight (fold bottom first, then sides)
    4. Toast seam-side down first 1–2 min per side
    5. Serve w/ chips and extra sauce
