One Pan Creamy Shrimp Pappardelle

If you hate washing a sink full of dishes after dinner, this one’s for you. Everything cooks in one pan, the pasta soaks up all the flavor, and the sauce turns creamy, velvety, and so good. Shrimp, tomatoes, spinach, parmesan… dinner in about 20 minutes and it tastes like something from a cozy little Italian restaurant. Save this for the nights you want something comforting but easy.

  • INGREDIENTS

    6 oz Dry egg pappardelle

    ½ lb Raw shrimp, peeled and deveined

    1 cup Cherry tomatoes, halved

    ⅓ Red onion, finely sliced

    A handful of chopped spinach

    3 Garlic cloves

    1 tbsp Italian seasoning

    1 tsp Salt

    ½ tsp Black pepper

    ⅔ cup Heavy cream

    2 cups Chicken broth

    ½ cup Marinara sauce

    ⅓ cup Grated parmesan

    2 tbsp Olive oil

    2 tbsp Fresh basil, chopped

     

  • INSTRUCTIONS

    1. In a large skillet add pappardelle, tomatoes, onion, garlic, seasonings, heavy cream, broth, marinara, and olive oil
    2. Bring to a gentle simmer over medium heat. Cover and cook for 10 to 12 minutes, stirring occasionally so the pasta doesn’t stick
    3. Add shrimp and spinach. Cook 3 to 4 minutes until the shrimp turn pink and the spinach wilts
    4. Remove from heat and stir in parmesan until the sauce becomes creamy and coats the pasta
    5. Finish with basil and extra parmesan
