Mediterranean Nachos

My current obsession, I’ve been making this every week.
Crispy pita chips, juicy steak, tangy lemony salad, and creamy yogurt sauce… all served on one sheet pan.

 

Serves: 4

Prep Time: 30 minutes (including marinating time)

Cook Time: 20 minutes

Total Time: 50 minutes

  • INGREDIENTS

    Pita Chips:

    4–5 Pita breads, cut into triangles

    2 tbsp Olive oil

    Salt

    Optional:

    Za’atar or paprika 

     

    Lemony Salad:

    4 Persian cucumbers, diced

    1 cup Cherry tomatoes or 2 tomatoes, chopped

    ¼  Red onion, diced

    1-2  Lemon's worth of juice

    2 tbsp Olive oil 


    Salt and Pepper to taste 


    1 tbsp Chopped parsley

     

    Creamy Yogurt Sauce:

    ½ cup Greek yogurt

    1 Carlic clove, grated

    1 tbsp Lemon juice

    1 tbsp Olive oil 


    1 tsp Dried mint

    Salt and Pepper to taste 


    2 tbsp Cold water, to thin it out 

     

    Steak Marinade:

    1 lb Skirt steak

    ¼ cup Soy sauce

    2 Lime's worth of juice

    2 tbsp Olive oil 


    4 Garlic cloves, minced

    ½ tsp Smoked paprika (and seasoning of choice) 


    Black pepper

  • INSTRUCTIONS

    Marinaded Steak:

    1. Combine Steak Marinade ingredients
    2. Marinate steak for at least 30 minutes (ideally 2-4 hours), then pat dry.
    3. Sear in hot cast iron pan with a drizzle of oil for 2-3 minutes per side. (for medium-rare)
    4. Let rest for 5 minutes, then slice thin against the grain

     

    Pita Chips:

    1. Bake at 400°F for 15 min, flipping halfway and don’t overcrowd the sheet pan.
