Mediterranean Cottage Cheese Bowl

Do you ever want a lunch you can throw together in minutes but it still feels fresh, filling, and kinda fancy? This bowl is exactly that. It’s high-protein, super customizable, and every bite is a different little combo (which is honestly the best part)

  • INGREDIENTS

    2 to 3 slices French baguette

    10 oz 4% Cottage cheese

    Extra virgin olive oil

    2 Persian cucumbers (half-moon sliced)

    6 cherry tomatoes (halved)

    A few black olives (halved)

    2 tbsp Sun-dried tomatoes

    3 Mini bell peppers

    1 tbsp Capers

    1 tbsp Sweet pepper drops

    Flaky salt

    Balsamic glaze

    Red pepper flakes

  • INSTRUCTIONS

    1. Heat a pan and drizzle olive oil, then toast the baguette slices until golden
    2. Add cottage cheese to a bowl and spread it out
    3. Add all your toppings around the edges to make it colorful and pretty. Then season with flaky salt and red pepper flakes
    4. Drizzle olive oil plus balsamic glaze, and enjoy!
