Marry Me Chicken & Potato Bake

If you’re craving cozy comfort food, this creamy chicken and potato bake is about to become your new go to. Juicy chicken, cheesy sauce, and golden roasted potatoes all baked together… it’s the kind of meal that makes everyone fall in love at first bite

  • INGREDIENTS

    Chicken:

    1 lb Chicken breast 

    1 lb Chicken thighs, diced

    1 Onion, diced

    3 Garlic cloves, pressed

    1 tbsp Tomato paste

    1 tsp Italian seasoning

    1 tsp Chili flakes

    1 tsp Black pepper

    Salt

    ⅓ cup Sun-dried tomatoes, chopped

    1 ¼ cups Chicken broth

    ⅓ cup Heavy cream

    4 tbsp Grated parmesan

     

    Potatoes:

    2 lbs Yukon gold potatoes, peeled and chopped

    2 tbsp Melted butter

    1 tsp Garlic powder

    1 tsp Salt

    1 tsp Black pepper

    2 tbsp Grated parmesan

     

    Fresh parsley to garnish

  • INSTRUCTIONS

    1. Boil potatoes for about 12 minutes
    2. Toss potatoes with butter, garlic powder, salt & pepper from Potatoes ingredients
    3. In an oven-safe pan, sauté onion for 3 minutes, then add garlic sauté for 1 minute. Add chicken, cook 5 minutes
    4. Stir in tomato paste, Italian seasoning, chili flakes, pepper and sun-dried tomatoes
    5. Add broth and bring to a simmer. Stir in cream and parmesan from Chicken ingredients, cook for about 5 minutes until slightly reduced
    6. Top with potatoes. Bake at 350°F for 25 minutes
    7. Sprinkle parmesan, bake 5 more minutes. Garnish with parsley & enjoy!
