Lavash Square Pastrami Fold

Everyone’s seen the viral tortilla triangle… but this is my version.
I swapped the tortilla for a lavash square and I’m not going back. The square fold gives you more room for toppings and a crunch that’s actually unreal. If you need a Friday reward meal, this is my go-to

 

Serves: 2

Prep Time: 15 minutes

Cook Time: 25 minutes

Total Time: 40 minutes

  • INGREDIENTS

    Lavash (cut into a square)
    2 to 3 Pastrami slices
    Cheddar or provolone
    2 Tomato slices
    ¼ Avocado, sliced
    Mizuna or arugula
    Spicy mayo (I used Hot Giardinayo)
    Salt

    Pepper

  • INSTRUCTIONS

    1. Cut lavash into a square. Slice a slit from the bottom center to the middle
    2. Spread sauce all over. Add toppings to each quadrant : pastrami, cheese, veggies, greens
    3. Fold section over section into a layered square
    4. Toast in a sandwich toaster, pan, or panini press until golden and melty
