Hot Honey Chicken Bowl

  • INGREDIENTS

    Crispy Chicken:

    4 Chicken breasts or 6-8 thighs, bite-sized

    ½ cup Plain yogurt

    2 cups Panko breadcrumbs

    ½ cup All-purpose flour

    1 tbsp Paprika

    1 tbsp Garlic powder

    1 tbsp Onion powder

    Salt and Pepper

    Cooking spray

     

    Sweet Potatoes:

    3 Sweet potatoes, peeled and cubed

    ½ tsp Paprika

    Salt and Pepper, to taste

     

    Coleslaw:

    2 cups Green cabbage, shredded

    3 cups Red cabbage, shredded

    2 cups Carrots, shredded

    Dressing:

    ½–1 cup Plain greek yogurt (start with ½ cup, add more for creamier)

    4 tbsp Mayo

    1 tbsp Apple cider vinegar

    1 tsp Dijon mustard

    1-2 tsp Maple syrup

    ¼ tsp Celery seeds

    Salt and Pepper

     

    Toppings:

    Spicy Pickles

    Hot honey (mix with 1 tsp hot sauce or chili flakes if you like extra heat)

  • INSTRUCTIONS

    1. Preheat oven to 425°F. Line a large baking sheet
    2.  
    3. Coat chicken in yogurt, then dredge in flour, panko, and spices, pressing firmly so coating sticks
    4. Season sweet potatoes, spread both on sheet pan. Spray or drizzle lightly with oil
    5. Bake 22-25 minutes, flip halfway
    6. Whisk dressing, toss with cabbage and carrots (or use bagged slaw). Chill until ready to serve
    7. Toss chicken with hot honey (and hot sauce if you like). Build your bowl and enjoy
