Grilled Peach and Cherry Panzanella

Sweet grilled peaches, juicy cherries, creamy burrata, crispy sourdough, cucumbers, herbs, and a white balsamic vinaigrette. Sweet, creamy, crunchy. You'll make it on repeat

  • INGREDIENTS

    Salad:

     4 cups torn sourdough bread

    3 peaches, halved, pitted, and sliced into thick wedges

    1 cup cherries, pitted and halved

    3 Persian cucumbers, sliced

    1 to 2 balls burrata

    2 cups arugula or little gem lettuce

    ¼ cup toasted chopped pistachios

    Olive oil for grilling peaches

    Flaky salt

    Black pepper

     

    White Balsamic Vinaigrette:

    ½ cup Olive oil

    3 tbsp white balsamic vinegar

    2 tbsp chopped chives

    1 tsp honey

    Salt, to taste

    Black pepper, to taste

  • INSTRUCTIONS

    White Balsamic Vinaigrette:

    1. Whisk together the vinaigrette ingredients

     

    Salad:

    2. Toss the sourdough with olive oil and a pinch of salt. Bake at 400°F for 10 minutes, until golden and crisp

    3. Brush the peaches with olive oil and grill cut-side down for 3 minutes

    4. Add the arugula to a large bowl and massage with 2 tbsp of the dressing. Top with the toasted bread, cherries, cucumbers, peaches, burrata, and pistachios. Add the rest of the dressing on top and finish with extra black pepper
