Greek Chicken Loaded Potatoes

This meal is high protein, easy, cozy, and fresh. Perfect for when you want comfort food but still want to feel good after. Fluffy baked potatoes loaded with lemony Greek chicken, crunchy salad, and creamy tzatziki. Warm, satisfying, and nourishing without feeling heavy. Simple ingredients, big flavor, and perfect for weeknights or meal prep

  • INGREDIENTS

    Potatoes:

    4 Russet potatoes

    Olive oil

    Salt

    Pepper

     

    Greek Chicken:

    4 Chicken breasts or thighs

    3 tbsp Olive oil

    2 tbsp Lemon juice

    2 Garlic cloves, minced

    1½ tsp Oregano

    1 tsp Dijon mustard

    Salt

    Pepper

     

    Salad:

    Cucumber

    Tomato

    Feta

    Dill

    2 tbsp Olive oil

    1 tbsp Red wine vinegar

    Salt

    Pepper

    1 tbsp Lemon juice

     

    Tzatziki:

    1 cup Greek yogurt

    ½ Cucumber, grated and squeezed dry 

    2 Garlic cloves, minced

    ½ Lemon's worth of juice

    1 tbsp Dill

    1 tbsp Olive oil

    Salt

    Pepper

  • INSTRUCTIONS

    1. Poke holes in the potatoes and rub with olive oil, salt, and pepper. Bake at 425°F for 60 to 90 minutes, until crispy on the outside and fluffy inside
    2. Marinate the chicken with olive oil, lemon juice, garlic, oregano, Dijon, salt, and pepper for at least 30 minutes. Pan-sear in a little oil until golden and cooked through, then chop
    3. Toss the salad ingredients together and mix all tzatziki ingredients
    4. Fluff the potatoes with a little butter, then top with chicken, salad, and tzatziki. Finish with extra feta and dill
