Not to be dramatic, but this Fig & Mortadella Sandwich with Burrata is the moment you’ve been waiting for. Imagine this: warm ciabatta, mortadella, creamy burrata, sweet earthy figs, and a dreamy pistachio pesto that comes together in minutes, perfect for an Italian-inspired lunch. Serves: 2 (pesto yields ~1 cup, enough for 3-4 sandwiches)

Prep Time: 15 minutes (includes pesto and assembly)

Cook Time: 10 minutes (18 minutes with optional bread hack and toasting)

  • INGREDIENTS

    1 Ciabatta loaf

    3 cups Fresh basil leaves

    ½ cup Grated parmesan cheese

    ½ cup Shelled pistachios

    2 Garlic cloves

    1 tsp Salt

    ½ tsp Black pepper

    ½ cup Extra virgin olive oil

    5 slices Mortadella

    1 ball Burrata cheese

    3 Fresh figs, sliced

    Extra basil leaves and Crushed pistachios

  • INSTRUCTIONS

    Bread Hack (for stale bread):

    1. Quickly rinse the ciabatta under water (yes, really!) and bake at 300°F for 6–8 minutes. It comes out fluffy inside and crispy outside, like it’s fresh from the bakery

    Pistachio Pesto:

    1. In a blender, combine basil, parmesan, pistachios, garlic, salt, pepper, and olive oil. (Food processor = thicker texture.)

    Build the Sandwich:

    1. Slice and lightly toast the ciabatta
    2. Spread a generous layer of pesto
    3. Layer mortadella slices, fresh fig slices, and torn burrata
    4. Finish with cracked black pepper, fresh basil, and crushed pistachios
