Dubai Chocolate Protein Ice Cream Bars

Okay these turned out insane and were gone the same night, didn’t even make it to the freezer. Creamy, crunchy, nutty, chocolatey… they taste like knafeh met a Magnum bar and went on vacation in Dubai, definitely keeping these in my freezer all summer.

 

Serves: 7 bars

Prep Time: 25 minutes

Cook Time: 16 minutes (for kataifi base)

Freeze Time: 4 to 6 hours (plus 20 minutes after dipping)

Total Time: 6 hours

  • INGREDIENTS

    4 oz Kataifi (shredded phyllo)

    1 tbsp Melted butter

    ½ cup and ⅓ cup (seperated), Pistachio cream

    4 tbsp Tahini

    1 Banana

    1 scoop Vanilla protein powder

    1 cup Greek yogurt

    1 tbsp Honey (or to taste)

    1 cup Dark chocolate

    2 tsp Coconut oil

    Crushed pistachios (topping)

  • INSTRUCTIONS

    1. Cut and shred kataifi, spread on sheet pan, toss with butter, bake at 350°F for 16 min (toss halfway)
    2. Mix with ½ cup pistachio cream and tahini
    3. Add 2 tbsp to each mold, press down, add a stick
    4. Blend banana, protein, ⅓ cup pistachio cream, yogurt, honey and pour over kataifi base
    5. Freeze 4–6 hrs or overnight
    6. Remove from molds, freeze on sheet pan for another 20 min, dip in melted chocolate and coconut oil, sprinkle pistachios, and let set
