Crunchy Celery Salad

If you think salads are boring… this one will change your mind.
It’s crunchy, salty, sweet, and tossed in the most addictive maple apple vinaigrette.
The best part? Made in one bowl, and it gets even better in the fridge. Perfect for meal prep, summer gatherings, or just you and a spoon.

 

Serves: 4

Time: 20 minutes

  • INGREDIENTS

    Salad:

    1 Stalk of celery, thinly sliced

    1 Shallot, thinly sliced

    6 Medjool dates, pitted and chopped

    ½ cup Roasted almonds, chopped

    ⅓ cup Grated parmesan (plus more to top)
     

    Maple Apple Vinaigrette:

    1 Granny Smith apple, diced

    6 sprigs Parsley, finely chopped

    1 Garlic clove, pressed

    3 tbsp Apple cider vinegar

    2 tbsp Maple syrup

    Salt and Pepper

    ⅓ cup Olive oil

  • INSTRUCTIONS

    1. Add a little lemon juice on top of the apples to prevent browning
    2. In a bowl, combine everything for the vinaigrette except the olive oil. Slowly whisk in the oil until smooth and silky.
    3.  In the same bowl, add the celery, shallot, dates, almonds, and Parmesan. Toss well, and top with extra parmesan
