Crispy Rice Tuna Bites

Like a spicy tuna roll… but crispier, creamier, and way more fun to eat. The perfect bite for summer nights, date nights, or dinner parties

  • INGREDIENTS

    Crispy Rice:

    4 cups Cooked jasmine rice (day-old is best)

    1½ tbsp Rice vinegar 

    1 tsp Sugar

    2 tbsp Ponzu

    Pinch of salt

    Oil spray (for waffle maker)

     

    Spicy Tuna:

    1 lb Sushi-grade bluefin tuna, finely diced

    1½ tbsp Soy sauce

    2 tbsp Mayo

    1–2 tsp Sriracha (to taste)

    ½ Lime's worth of juice

     

    Toppings:

    1 Persian cucumber, thinly sliced

    1 Avocado, smashed

    ¼ Mango, diced

    Furikake

    Thinly sliced green onion

  • INSTRUCTIONS

    1. Mix the rice with vinegar, sugar, ponzu & salt
    2. Spray your waffle maker (any size works!) with oil. Add the rice, press down, and cook for 12–15 mins until golden and crispy
    3. Combine tuna, soy sauce, mayo, sriracha & lime juice. Let it marinate for 10 mins in the fridge
    4. Top crispy rice with avocado, tuna, cucumber, mango, furikake & green onion.
