Crispy Quinoa Salmon

The best salmon in my rotation. Crunchy quinoa crust + a bright Greek salad = perfection.

 

Serves: 2
Time: 45 minutes

  • INGREDIENTS

    Salmon:

    2 salmon filets

     1 tsp honey 

     Juice of 1⁄2 lemon

     Salt, black pepper, garlic powder

     2 tbsp Dijon mustard

     

    Crispy Quinoa:

    2 cups cooked quinoa

     Salt 

     Paprika

     4 tbsp olive oil

     

    Greek Salad:

     3 Persian cucumbers 

     2 Roma tomatoes 

     1 green bell pepper

     4 tbsp chopped parsley 

     2 tbsp feta

     Juice of 1 lemon 

     2 tbsp olive oil

     Salt to taste

  • INSTRUCTIONS

    1. Preheat oven to 375°F.
    2. Spread quinoa on parchment-lined sheet, toss with oil, salt, and paprika.
    3. Bake 22 mins, stirring every 10.
    4.  Marinate salmon in honey, lemon, garlic powder, salt & pepper.
    5.  Coat salmon in Dijon mustard and press quinoa on top.
    6.  Bake at 400°F for 12–15 mins.
    7.  Mix salad ingredients and serve with crispy quinoa salmon.
