Crispy Cheddar and Egg Avocado Toast

This is the avocado toast I’d make when you want to use all the good stuff you have on hand. Crispy sourdough, creamy avocado, cucumber ribbons, and a jammy egg with a crispy cheddar layer. Finished with finger lime for the freshest little citrus pop

  • INGREDIENTS

    1 Large slice sourdough

    ½ Large avocado

    2 tsp Fresh lemon juice

    ½ Persian cucumber

    1 Large egg

    ¼ cup Finely shredded sharp cheddar

    1 Finger lime, or lime zest

    Extra virgin olive oil

    Flaky salt

    Black pepper

    Edible flowers, optional

  • INSTRUCTIONS

    1. Boil the egg for 7 minutes (make sure the water is boiling before adding the egg), then transfer to an ice bath. Peel and cut in half lengthwise
    2. Shave the cucumber into thin ribbons with a vegetable peeler and pat dry
    3. Toast the sourdough until golden and crispy. Mash the avocado, keeping it chunky, with lemon juice, salt, and pepper, then spread over the toast
    4. Heat a nonstick skillet over medium-low. Divide the cheddar into 2 small piles. Once melted and bubbling, place each egg half cut-side down onto the cheese. Cook for 2 minutes until golden and crispy
    5. Add the cucumber ribbons and crispy cheddar eggs to the toast. Finish with finger lime pearls, edible flowers, flaky salt, pepper, and a light drizzle of olive oil.
