Creamy Gnocchi Soup

Ready in 30 minutes, all in one pot… INCLUDING PREP
My family isn’t even a soup family, and this whole pot was gone within minutes.
Creamy, cozy, a little spicy, and very treat yourself energy.
This might be the best soup you make

 

Serves: 4

Time: 30 minutes

  • INGREDIENTS

     1 lb Ground beef (85% lean, 15% fat)

    1 tbsp Avocado oil

    2 Shallots, chopped

    3 Garlic cloves, minced

    1 Carrot, peeled and chopped

    2 tbsp Tomato paste

    ½ cup Sun-dried tomatoes, chopped

    1 tsp Chili flakes

    5 cups Chicken broth

    1 tbsp Italian seasoning

    ¾ cup Heavy cream

    1 lb Gnocchi

    ½ cup Grated Parmesan

    Salt (to taste)

    Pepper (to taste)

    2 cups Chopped kale

    Fresh chopped basil

  • INSTRUCTIONS

    1. Heat oil in a large pot over high-medium heat. Brown the ground beef. Add shallots and cook for 2 minutes. Stir in carrot and garlic and cook for 2 minutes. Season with salt, pepper, and chili flakes
    2. Add tomato paste and cook for 2 minutes until lightly toasted. Add sun-dried tomatoes, broth, and Italian seasoning. Bring to a boil, cover, lower heat to medium, and simmer for 10 minutes
    3. Lower heat and add cream and gnocchi. Cook for 3 minutes. Add the kale and parmesan and cook for just a few more minutes. Taste and adjust seasoning
    4. Serve with fresh basil and extra Parmesan
