Chicken Parmesan Sandwich

Holiday season is for cheesy, saucy sandwiches that hug you from the inside This sandwich is my go to December comfort food. It’s crispy, melty, and surprisingly easy to make at home. Save this recipe for a cold night 

 

Serves: 2 sandwiches

Prep Time: 15 minutes

Cook Time: 35 minutes

Total Time: 50 minutes (includes 15 minute rest)

  • INGREDIENTS

    Chicken:

    2 Chicken breasts, pounded thin

    Salt

    Pepper

    Garlic powder

    Avocado oil (for frying)

    Rustic french baguette

    Fresh mozzarella slices (about 6)

    Parmesan

     

    Breading: 

    ¼ cup Flour

    ½ cup Breadcrumbs

    ¼ cup Seasoned croutons, crushed

    2 Eggs

     

    Sauce and Extras:

    8 oz Tomato sauce or marinara

    2 to 4 Garlic cloves, pressed

    Fresh basil

    2 tsp Italian seasoning

    Olive oil

    Pesto

     

    Arugula Salad:

    Arugula

    Olive oil

    Salt

    Parmesan

    Lemon

  • INSTRUCTIONS

    1. Season chicken and coat lightly with flour
    2. Dip into eggs, then press into breadcrumb mixture. Rest 15 minutes
    3. Heat a pan until hot, add avocado oil, let it heat, then fry chicken for 4 to 5 minutes per side until golden
    4. Mix sauce, garlic, basil, olive oil, seasoning, salt, and pepper in a baking dish. Top with mozzarella and bake at 350°F for 20 minutes
    5. Lightly wet the baguette exterior. Slice open: pesto on one side, olive oil and chicken on the other. Bake 10 minutes at 350°F. Finish with melted cheese, sauce, and Parmesan. Serve warm with Arugula salad
