Chicken Fajita Platter

If you only have 30 minutes… make THIS. Juicy citrus marinated chicken, charred peppers, onions, fire toasted tortillas, creamy avocado, and lime wedges for the perfect fresh squeeze. Dinner doesn’t get easier or tastier.

 

Serves: 4-5

Prep Time: 10 minutes

Marination Time: 30 minutes

Cook Time: 20 minutes

Total Time: 1 hour

  • INGREDIENTS

    2–2 ½ lbs Chicken tenders or breast, cut into strips
    2 Limes (1 juiced, 1 for serving)

    ½ large Orange, juiced

    3 tbsp Soy sauce

    2 tbsp Taco seasoning

    1 ½ tsp Smoked paprika

    1 tsp Onion powder

    2 tbsp Fresh cilantro, chopped

    2 tbsp Oil

    1 Large onion, sliced

    2 Bell peppers, sliced

    8–10 Tortillas (toasted over flame)

    2 Avocados, sliced

  • INSTRUCTIONS

    Marinade:

    1. Place chicken in a bowl. Add lime juice, orange juice, soy sauce, taco seasoning, paprika & cilantro. Toss to coat and marinate up to 30 minutes.

    Peppers and Onions:

    1. Heat 1 tbsp oil in skillet over med-high. Add onions and peppers, season, cook until softened and charred (8–10 minutes). Remove

    Chicken:

    1. Heat 1 tbsp oil in same skillet. Cook chicken in a single layer 8–10 min, turning until golden and cooked through

    To Serve:

    1. Toast tortillas over flame. Layer chicken, peppers, onions, avocado and lime wedges.
Garnish with cilantro & enjoy!
