Cheesy Beef and Potato Bake

Comfort food at its finest. It is cozy, cheesy, simple, and somehow even better as leftovers. How is this even legal?!

 

Serves: 6

Prep Time: 15 minutes

Cook Time: 1 hour (10 minutes stovetop, 50 minutes bake)

Total Time: 1 hour 30 minutes

  • INGREDIENTS

    1 lb Ground beef

    9 small Yukon gold potatoes, thinly sliced

    ½ Yellow onion, chopped

    Olive oil

    1 ½ cups Marinara

    2 tsp Italian seasoning

    Salt

     Pepper

    Paprika

    Garlic powder

    2 cups Shredded mozzarella

    1 cup Grated parmesan

    splash of Cream

    Parsley for garnish (optional)

  • INSTRUCTIONS

    TIP: For a lighter option, use less cheese and skip the cream

    1. Sauté onions in olive oil, then add the beef and seasonings
    2. Pour in marinara and cook for 3 minutes. Add a splash of cream and let it all simmer so the flavors come together
    3. In a casserole dish, layer beef sauce, potatoes, and cheese. Repeat
    4. Finish with a ridiculous amount of cheese on top
    5. Bake at 380°F for 30 minutes covered with foil, then 20 minutes uncovered 
    6. Let it rest for 10 minutes. I know it is hard
