Breakfast Casserole Burrito

Cook Time: 30 minutes (plus 5 to 10 minutes for cooling)

Total Time: 45 minutes

  • INGREDIENTS

    3 slices turkey bacon, bacon, or ham (cubed)

    ½ lb frozen tots

    4 eggs

    ½ cup cheddar

    ¼ cup mozzarella


    ¼ cup sour cream


    2 tbsp cream or milk

    ¼ tsp black pepper

    ¼ tsp garlic powder

    ¼ tsp onion powder

    ½ tsp salt


    4 tortillas

    Avocado (for serving)

  • INSTRUCTIONS

    1. In a bowl, whisk together the eggs, sour cream, cream, cheeses, and seasonings
    2. Add frozen tots to an 8x8 casserole dish, layer bacon on top, and pour in the egg mixture
    3. Bake at 375°F for 30 minutes. Let cool for 5–10 minutes
    4. Warm your tortillas (this makes them easier to work with—don’t skip it!)
    5. Slice the casserole, add to tortillas, and top with avocado
    6. Fold in the sides, then roll from the bottom up, nice and snug
