Banana Bread Overnight Oats

Creamy, cinnamon-y oats with ripe banana, toasted walnuts and mini chocolate chips, topped with cinnamon yogurt frosting.
About 24g of protein and 11g of fiber per serving, and it keeps well in the fridge for about 4 days

  • INGREDIENTS

    Overnight Oats:

    2 Very ripe bananas or 4 minis, mashed

    2 cups Old-fashioned rolled oats

    2 cups Milk of choice

    1 cup Plain Greek yogurt

    ¼ cup Chia seeds

    2 tbsp Pure maple syrup

    2 tsp Vanilla paste

    2 tsp Cinnamon

    ½ tsp Nutmeg

    ½ tsp Kosher salt

    ½ cup Toasted walnuts, chopped, plus more for topping

    ⅓ cup Mini chocolate chips

     

    Cinnamon Yogurt Topping:

    ¾ cup Greek yogurt

    1 tbsp Maple syrup

    ½ tsp Vanilla paste

    ¼ tsp Cinnamon

  • INSTRUCTIONS

    Overnight Oats:

    1. Mix the mashed bananas, milk, Greek yogurt, maple syrup and vanilla paste until creamy.

    2. Stir in the oats, chia seeds, cinnamon, nutmeg, salt, walnuts and mini chocolate chips.
    3. Divide between 4 containers

     

    Cinnamon Yogurt:

    4. Mix the topping ingredients until creamy, then spread over the oats like frosting

     

    Assemble:

    5. Finish with toasted walnuts, chocolate chips and cinnamon.

    6. Cover and refrigerate overnight. Add fresh banana slices when you’re ready to eat.
