Air Fryer BBQ Buffalo Chicken Flatbread Pizza

This might be the easiest summer pizza you’ll make. We’re busy summering, it’s way too hot to spend hours in the kitchen, and sometimes you just need a quick lunch or dinner everyone will love.

 

Serves: 2 personal sized flatbreads

Prep time: 10 minutes

Cook time: 15 minutes

Total time: 25 minutes

  • INGREDIENTS

    Flatbread:

    1 package Trader Joe’s pizza crust, cut in half (naan also works)

    1 cup Cooked shredded chicken or rotisserie chicken

     3 tbsp BBQ sauce

    2 tbsp Buffalo sauce

    1 cup Shredded mozzarella

    1 Ear fresh corn, kernels cut off the cob

    ¼ Small red onion, thinly sliced

    1 tsp Avocado or olive oil

    Micro cilantro or chopped fresh cilantro

     

    Spicy Mayo:

    ¼ cup Mayonnaise

    1 tbsp Buffalo sauce

    1 tsp Lime juice

    Pinch of salt, only if needed

  • INSTRUCTIONS

    1. Heat 2 tsp oil in a cast-iron skillet over medium-high heat. Add the corn and cook for about 7 minutes. Add the red onion and cook for another 5 minutes
    2. Preheat the air fryer to 375°F. Toss the chicken with bbq buffalo sauce
    3. Spread a thin layer of bbq sauce over each crust. Top with mozzarella, BBQ Buffalo chicken, charred corn, and cooked red onion
    4. Air fry one pizza at a time for 4 to 7 minutes, checking around 4 minutes since every air fryer cooks differently.
    5. Mix the spicy mayo ingredients. Drizzle over the pizzas and finish with fresh cilantro
