5-Minute Pan con Tomate

Sometimes the simplest things make the most unreal bites. If you want an easy snack that tastes way better than it should, make this pan con tomate. It is crispy toasted sourdough, juicy grated tomato, garlic, flaky salt, and really good olive oil

 

Serves: 2 to 4

Prep time: 5 minutes

Cook time: 5 minutes

Total time: 10 minutes

  • INGREDIENTS

    Sourdough bread slices

    Ripe tomatoes, I used beefsteak and heirloom

    Extra virgin olive oil

    1 Garlic clove

    Flaky salt

    Oregano

    Stracciatella or burrata

    Fresh chives

  • INSTRUCTIONS

    1. Toast the sourdough in olive oil in a hot pan for about 2 minutes per side, until golden and crispy
    2. While the bread is still hot, rub a garlic clove directly over the surface. The crispy bread basically works like a little grater, giving you that perfect mild garlic flavor without overpowering the tomato
    3. Grate the tomatoes and strain off the excess liquid. Season with flaky salt and oregano
    4. Spoon the tomato generously over the toast, then add stracciatella, fresh chives, another pinch of flaky salt, and a good drizzle of olive oil
