30-Minute Beef Stroganoff

This 30 minute high protein beef stroganoff is creamy, cozy and exactly what I want for an easy weeknight dinner. Tender New York strip, golden mushrooms and a creamy Dijon sauce tossed with Protein+ pasta for 40g plus of protein per serving without giving fitness food

  • INGREDIENTS

    1 ¼ lb New York strip steak, thinly sliced

    Kosher salt

    Black pepper

    1 tsp Garlic powder

    1 to 2 tbsp Avocado oil

    1 Small yellow onion, thinly sliced

    8 oz Cremini mushrooms, sliced

    3 Garlic cloves, minced

    1 tbsp Dijon mustard

    1 tbsp Worcestershire sauce

    2 cups Low sodium beef broth plus 1 cup Water

    ¾ cup Heavy cream

    8 oz Barilla Protein+ pasta

    2 tbsp Fresh parsley, chopped

    ½ tsp Aleppo pepper or smoked paprika

  • INSTRUCTIONS

    1. Slice your beef, it will defrost a little while you prep other ingredients. Heat a large pan over medium high heat and add avocado oil
    2. Add beef, season with salt, pepper and garlic powder and cook 5 minutes until browned, then set aside
    3. In same pan medium heat, add a little more oil if needed, add onions for 1 minute, add mushrooms and cook 5 minutes until golden. Add garlic for 30 seconds, then stir in Dijon and Worcestershire
    4. Pour in broth and water, bring to a boil, add pasta and cover but leave a little opening, cook 10 minutes until al dente
    5. Lower heat, add heavy cream and cook 3 minutes until slightly thickened, add beef back in, stir and turn off heat. Sauce will thicken as it cools. Top with parsley, black pepper and Aleppo pepper
