10 Minute Watermelon Feta Rolls

POV: It’s 80° and you need a quick appetizer that tastes like summer in one bite 

 

Serves: 16 rolls

Time: 10 minutes

  • INGREDIENTS

    1 Small seedless watermelon

    6 oz Feta cheese, cut into 16 small pieces

    8 Mint leaves, finely chopped, plus more for topping

    3 tbsp Olive oil

    2 tsp Lemon zest

    2 tsp Za’atar, plus more for topping

    1 to 2 tbsp Balsamic glaze
     

  • INSTRUCTIONS

    1. Remove the rind from half of the watermelon and trim it into a rectangular block. Cut the block in half, then use a mandoline or wide vegetable peeler to create about 16 long, thin ribbons. Gently pat them dry to remove excess moisture
    2. Mix the olive oil, chopped mint, za’atar, and lemon zest
    3. Place a piece of feta and a small spoonful of the mint mixture at one end of each watermelon ribbon. Roll gently but snugly
    4. Arrange the rolls seam-side down on a platter, keeping them close together to help them stay closed
    5. Finish with extra za’atar, fresh mint, and a drizzle of balsamic glaze
